Healthy & Scrumptious Pumpkin Turkey Chili
Who says chili has to be the same thing over and over? As we enter into one of my favorite times of the year, Pumpkin Season, I love pulling out all my pumpkin recipes. I have A LOT! This is a simple recipe that can be made in about 15 minutes and then it will simmer on low for about 20 minutes longer. I always buy the generic brand of food unless the name brand is a better deal when I am shopping. Check out your grocery store’s sales, in-store coupons/discounts, and manufactures coupons.
This meal was under $10 and it made enough for 2 – 3 meals for a family of four.
Cut up your onion, bell peppers, and garlic.
TIP: I do not like the smell of onions on my hands after I handle it, so I wear latex gloves to remove the skin and cut it up. Even if I am using my food processor to cut, I still use the gloves when handling the onion. Then I just throw the gloves in the trash and I don’t have the smell of onion with me for the rest of the day.
Heat olive oil in your deep skillet or pot. Add the onion, bell peppers, and garlic and saute until soft. Stir in the Turkey and cook until brown. Add seasonings and cilantro. Mix to blended. Add all of the canned ingredients into the same skillet/pot.
Mix all ingredients. Reduce heat to low and cover. Simmer for 20 minutes.
I topped with low-fat cheese, fat-free sour cream, and avocado. These are all optional. Serve alone or with tortilla chips.
