Growing up I was NOT a fan of pumpkin anything…well except jack o’lanterns..because those are awesome! I never understood why everyone would get so excited over pumpkin pie. I would have much rather had a fruit pie over pumpkin any day. Then I left the dark side and entered the world of loving all things pumpkin.

The Best Ever Pumpkin Bars
Stir together the flour, baking powder, cinnamon, salt and baking soda.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.
Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 9 x 13 inch baking pan. Bake for 30 minutes. Enjoy the heavenly aroma that is about to fill your home. Your taste buds will be salivating just waiting to partake of what is to come.

I like to mix up my frosting while the bars are in the oven.
Combine the cream cheese and the butter with an electric mixer until smooth. Add the powdered sugar and mix at low speed.
If you don’t want your kitchen to look like it is snowing, mix the powdered sugar in a little at a time. I like to mix the cream cheese mixture and the powdered sugar with a spoon before I use the hand mixer. I may or may not have made a winter wonderland in my kitchen before. Ha!
Stir in the vanilla until blended.
Spread the frosting all over your melt in your mouth pumpkin bars. (I used a frosting decorator tip in these pictures)
